Date-orange oatmeal bars

I’ve made Pioneer Woman’s apricot bars a number of times. Most recently, I switched out the apricot preserves for a date-orange filling that was originally intended for hamentaschen, and which I found on Epicurious.

The dates and other ingredients made a ferocious sound in the food processor – loud enough to startle the dog six inches sideways – and I did have to add 3 Tbsp of water to achieve a jammy consistency, but it worked well as a substitute filling.


Overall the bars are quite sweet, and crumbly. Next time I might experiment with a different mixture – maybe using honey or nut butter (though not peanut butter, as someone in the house has a horror of peanut butter) to replace some of the sugar, and to make it stickier. These ones are more dessert than breakfast…
